Homemade Soy Yogurt
For best results use a soy milk that is higher in protein and fat. The Westsoy milk that I use has 5g of fat and 9g of protein and works well for me. I buy the yogurt starter at Amazon: Yogurt Starter
Have milk at room temperature
Mix half a jar of soy milk with 1 pkg of starter. Shake well.
Divide the mixture into 3 - 1 qt jars.
Top each jar with soy milk, shake well.
Place into Instant Pot on Yogurt setting for 12 hours.
Cowboy Caviar
Dressing:
2 T olive oil
1/4 c red wine vinegar
1-2 t hot sauce - optional
1 t salt
1/2 t pepper
Caviar:
1 can black eyed peas
2 c tomatoes finely chopped
2 c fresh corn kernels or thawed frozen corn
1 avocado, peeled and diced
1/4 c red onion finely chopped
1/2 c fresh cilantro chopped
Wisk dressing in a large bowl. Add "caviar" ingredients and mix gently. Cool in fridge for 20 minutes to let flavors blend. Serve as a salad
Butter Lettuce Taco Wraps with Dill Topping
#1 - Start with fresh butter lettuce (AKA Bibb Lettuce or Butterhead) rinsed and patted dry
#2 - Taco Meat
1 lb of lean ground beef or substitute lean turkey meat
½ purple/red onion chopped
1 medium zucchini chopped fine
1 pkg of sliced fresh mushrooms
Garlic
Taco seasoning (We used NO MSG taco seasoning by TONES) about 2-3 heaping tablespoons or to a taste
1 can of diced tomatoes (no sugar added)
Simmer
#3 - Dill Topping
1 bunch of fresh baby dill chopped
1 yellow pepper chopped (could also use a variety of colored peppers but yellow is what we had on hand tonight)
Other ½ of the purple/red onion chopped
Mrs Dash garlic and herb
Begin by portioning your meat so you know your Weight Watcher’s Points Plus on the meat into a serving bowl. The 1 lb mixture easily makes 4 servings and depending on the leanness of the meet can be anywhere from 4-6 points. Determine this number and your set! The rest is zero points plus!
#4 - Prepare the wrap: Take a piece of lettuce and lay it on your plate, spoon on some meat from your portioned bowl. Now add the dill topping. Garnish with Green Verde sauce or your favorite salsa, and grape tomatoes

Pre-heat my oven as hot as it will go! 500 degrees. Use a large cookie sheet type roasting pan that I spray with cooking spray. Lay the veggies on the tray and spray again with cooking spray. Then sprinkle Mrs Dash Garlic and Herb, sea salt, and pepper on all the veggies. Bake for about 15 min or until they are brown and tender
Whipped Cauliflower
2 - heads of cauliflower
Cook the cauliflower until tender then drain well.
Add to the cauliflower:
1/2 teaspoon of chicken or vegetable paste (Better Than Bouillon)
black pepper
minced garlic
optional: 1/2 C dehydrated potatoes flakes to make a thicker recipe
Use an electric hand blender or hand mixer to puree the cauliflower.
Once the cauliflower is mixed into a mash I stir in 1/2 to 1 cup of potatoes flakes depending on how thick you want the cauliflower as an end result.
Cucumber Salad
English cucumbers
Tomatoes
Mushrooms
Green onion
Radishes
Carrots
Jalapenos
Fat free feta cheese
Mrs Dash, black pepper, sea salt, fresh squeezed lemon or lime juice: to taste.
Optional:
Green, red, yellow or orange peppers
Chicken or tuna.
Canned or cooked chick peas
Lentils
Maureen's Cauliflower Salad
Steam cauliflower until slightly tender. Don't over steam, you don't want mushy.
Drain
Add:
1/4 C chopped baby dill
2-4 T fat-free or reduced fat sour cream
salt & pepper to taste
Enchilada Vegetable Soup
In a non-stick pan, spray pan with cooking spray and sauté until chili and peppers have softened:
1 onion
1 poblano chili
1 green pepper
1 jalapeno
1 T minced garlic
1 c carrots
1 c sliced mushrooms
ADD:
1 8oz can green chili enchilada sauce
1 c cooked brown rice
salt/pepper
Alternately add:
corn
beans
celery
zucchini
more sauce
more rice
more veggies
make it how you like it!
Cook covered until carrots are tender.
Yogurt & Frozen Berries
A favorite at my house is unsweetened homemade soy yogurt, stevia, and frozen berries. It is a perfect replacement when I crave ice cream!
Alterations:
Use Vanilla yogurt add berries
Use unsweetened yogurt add honey and berries
Use Greek yogurt sweeten to taste with favorite sweetener and add fruit
Frozen Pumpkin for Smoothies
Freeze pumpkin in ice cube trays to be used for smoothies.
I like to use 6 frozen pumpkin ice cubes, unsweetened vanilla almond milk, pumpkin spice, cinnamon, and stevia in a blender. Blend until smooth.
